Halloween is around the corner and this year I’ll show you how to make these adorable bats full of bliss! I’m the kind of girl who loves Halloween – but not the scary side of it. I love lighted up carved pumpkins (or anything edible made of pumpkins as a matter of fact), spooky spider webs, black cats decorations, witch hats … and bats of course. I saw the cutest bats in Singapore Zoo this summer, and fell right away in love with those little creatures hanging upside down and crunching happily their watermelon piece.
So this Halloween, let’s have a bat theme for our treats! They are easy to put together and don’t require complicated ingredients.
My bats’ bodies are energy balls. So the first step is to mix in a food processor dates, cashew nuts, hazelnuts, cacao, vanilla extract, coconut oil and a pinch of salt. One tip if your dates are very dry: place them in a bowl, cover with boiling water and leave to soak for 15 minutes to soften, then drain and they are ready for use.
Next, I melted dark chocolate and piped it in the shape of bats’ wings. I used a tooth pick to shape them a little more. The eyes were bought ready made from the store. If you don’t find such, just use white chocolate chips and place a dot of chocolate in the middle.
Now guess what the sharp teeth are made of?
… coconut chips! They are easy to cut with scissors. Alternatively you can play with sliced almonds or even use sunflower seeds.
Et voilà, no sugar, vegan, gluten free, super delicious and so much fun to do and eat! The perfect no-guilt treat for Halloween parties. With this recipe you’ll get six bats, with about 30g energy ball per each.
If you make my Halloween bats energy balls, please let me know how they came together or come chat with me on Instagram or Facebook, I love to hear what you do with my recipes!
Happy Halloween!
- 50 g cashew nuts
- 20 g hazelnuts
- 10 fresh soft dates, pitted
- 1 tbsp cocoa powder
- ½ tsp vanilla extract
- 1 tsp coconut oil
- Pinch of sea salt
- Coconut chips (or sliced almonds) shaped as 'teeth'
- 50 g dark vegan chocolate
- Edible eyes
- Blend the nuts in a food processor, pulsing until tiny chunks remain.
- Add the dates, vanilla extract, coconut oil, sea salt and cocoa powder and process until well combined. The mixture should be a little sticky.
- Roll the mixture with your hands into six balls.
- Melt the chocolate in bain-marie or in micro-wave. Pipe it to parchment paper in the shape of bats wings. One end of the wings should be slightly longer so you can stick it into the energy ball (see my picture). Place to refrigerator for 10 minutes for the chocolate to set and harden.
- Assemble the bats energy balls. Stick one wing on each side of the ball, gently press the eyes on the front and stick two 'teeth' under.
- Store in refrigerator until time to serve. Enjoy!
- 50 g noix de cajou
- 20 g noisettes
