Moist Orange And Almond Cake From Le Petit Jagu {Flourless, Gluten Free}

An exquisite orange and almond cake, wonderfully moist and melting in the mouth. No flour used at all, only oranges, almond powder, eggs and healthy sweeteners!

Ingredients
  • 2 organic oranges
  • 6 eggs
  • 250 g almond powder
  • 100 g organic honey
  • 100 g coconut sugar
  • 1 tsp baking powder
Instructions
  1. Wash and brush the oranges. Place in a large saucepan, covered with water and simmer for about 1,5-2 hours until very soft. Let them cool down.
  2. Preheat the oven to 170°C.
  3. Discard oranges tips. Place the oranges in the bowl of a food processor and blend until smooth (if you don't have a food processor, just chop them with a knife to a purée).
  4. Whip the eggs and coconut sugar in a bowl until the mixture gets thick and fluffy. With a spoon, stir in the honey, then the almond powder and the baking powder. Mix well together then stir in the puréed oranges.
  5. Butter or oil a cake tin. Pour the mixture into it.
  6. Bake in the oven for 50 minutes to one hour (convection mode). After about 30 or 45 min (depending on your oven), you can cover the top with aluminium foil so it doesn't get too brown.
  7. Remove from the oven and set aside to cool. Sprinkle over the roasted flaked almonds and coconut powdered sugar.
